PERi-PERi Chicken Breast stuffed with Spicy Cream Cheese Filling

Ingredients

  • 4 chicken breasts
  • 4 tsp. Hot Peri-Peri flavour shaker
  • 1 tbsp. olive oil
  • 4 Slices of smoked streaky bacon
  • 75g Full fat cream cheese
  • 10g Nando’s Hot Peri-Peri sauce
  • 1 small handful of fresh chopped parsley
  • 20g gherkins (finely diced)

Cooking Instructions

Put your chicken breast on a chopping board and with your hand flat on top of it, use a sharp knife to slice into one side of the breast, starting at the thicker end and ending at the thin point. Be careful not to cut all the way through to the other side

Preheat oven to 160c Fan.

Mix together the ingredients for the stuffing.

Flatten out the chicken breast (smooth side down) and then spread a thick layer of the stuffing on the fillet, fold over and wrap each breast in a slice of bacon.

Place breasts in a greased ovenproof dish, drizzle with oil and sprinkle with Nando’s Hot Peri-Peri Flavour shaker.

Put in the oven and cook for 25-30 minutes or until the chicken is fully cooked.

Serve.
