PERi-PERi Chicken & Avo Salad

  • 60ml PERi-PERi sauce (choose your flavour)
  • 2 avocados
  • 1 tin of drained cooked chickpeas
  • 60g thick yogurt
  • ¼ cucumber, deseeded and diced
  • ½ red onion, finely sliced
  • 8 cherry tomatoes, quartered
  • 120g shredded cooked chicken
  • Small bunch of coriander, parsley and mint (chopped)

    Mix chicken, cucumber, chicpeas, parsley, yogurt, and PERi-PERi sauce in a bowl.

    Cut avocado in half, remove the stone (they don’t tast so nice), score and scoop out of skin. Plate.

    Place tomatoes on avocado and top with chicken mix. Sprinkle with coriander, parsley and mint and enjoy – it feels good to be good.
