Anam's "Happy Hangover" Chicken

Ingredients

  • 100 g Lemon and Herb PERi-PERi Sauce
  • 200 ml Honey
  • 50 g Thyme
  • 10 ml Brown sugar
  • 10 ml Ginger
  • 10 ml Garlic
  • 500 ml Cola
  • 300 ml Cornflour
  • 20 ml Smoked paprika
  • 20 ml Cayenne
  • 40 ml Chilli flakes
  • 500 ml Canola oil

To serve

Garnish with some finely chopped corriander, green chilli and spring onionsSprinkle with some sesame seedsServe

Anam's "Happy Hangover" Chicken

Cooking Instructions

Finely grate garlic and ginger. Mix with cornflour, smoked paprika, cayenne pepper, chilli flakes and thyme. Place your chicken with this basting in a plastic container, close and rest for 30 minutes to allow the flavour to develop.

Heat a pan, add oil. When the oil is hot, add the chicken. Cook until golden brown. Turn down the heat and let the chicken simmer for 10 minutes.

Use the same pan for your marinade. Add the Nando's Lemon and Herb sauce, honey, brown sugar and chilli flakes to the Cola. Cook for 2 minutes. Use to glaze your chicken wings.
