Ingredients

  • 120 ml Lemon and Herb PERi-PERi Sauce
  • 2kg chicken
  • 4 tablespoons oilve oil
  • salt and black pepper to taste
  • 1 teaspoon cinnamon
  • 1 teaspoon rosemary
  • 1 tablespoon shisanyama spice
  • 5 potatoes peeled and cubed
  • 2 small chillies
  • 1 bunch of spinach
  • 1 onion chopped
  • 1 cup milk
  • 1 tablespoon butter
  • 1 tablespoon flour

To serve

Once you notice the chicken is well cooked you add the half tablespoon of ground rosemary to add taste and flavour.

Cooking Instructions

Prep time 40 minutes Cooking time 35 minutes Pre-heat the oven to 200°C. Place the chicken in a large roasting dish, drizzle with oil, add the spices, herbs , PERi-PERi sauce and seasoning and rub in with your hands. Roast for 25minutes, add the cubed potatoes and roast until golden brown.

Fry the onion, spinach and chillies until cooked. In a separate pan, melt butter, stir in flour over low heat and add milk slowly to make a white sauce. Cook for 15 minutes and add fried spinach to make creamy spinach.
